Nutrition study seeks
to lower cholesterol
The Stanford Center for
Research in Disease Prevention (SCRDP) has been funded by
the National Institutes of Health to investigate the
health benefits of diet on blood cholesterol and other
health parameters.
Volunteers for the study
should have moderately elevated blood cholesterol levels,
but should otherwise be in general good health. Eligible
participants will be non-smokers with no history of heart
disease who are not taking any cholesterol-lowering
medications.
LDL cholesterol levels of
volunteers should be between 130 and 190 mg/dL. Blood
cholesterol testing is provided.
Participation requires
eating lunch or dinner at Stanford Hospital every weekday
for four weeks. All other meals for the study period,
with the exception of one free choice meal
each week, will be provided and conveniently packaged to
eat at home or work.
In addition, volunteers
will receive a detailed analysis of their pre-study
eating habits, as well as their laboratory results,
including blood cholesterol levels.
The study is being
conducted by research associate Christopher Gardner and
Dr. John Farquhar, the C.F. Rehnborg Professor of Disease
Prevention.
